I want to tell you about my cooking adventure the other night.
Remember,
we got a shipment with a lot of Italian products this week. I gathered
up
pasta, sauce, frozen chicken breasts and headed to the kitchen. The
sauce
was Paesana's Sicilian Gravy made from whole peeled tomatoes, fresh onions, extra
virgin olive oil, fresh garlic, sea salt, black pepper, and other
spices (sounds good doesn't it?). I picked out Granoro's Fusilli pasta
because it was "pretty" (I liked the curls and thought it would help
hold
the sauce). The assembly was easy... In a large casserole dish, dump the
uncooked bag of pasta, add about 1/2 cup water, layer the boneless/skinless
chicken breast across the pasta, and pour the pasta sauce across the top.
Cover with aluminum foil and slide into a preheated oven for an hour (350
degrees more or less). I also added several stems of fresh tarragon from
the garden. Check the mixture about half way through the cooking time
and
see if you need to add more water (it may look dry). Since I used frozen
chicken breast, it did take longer to cook which led to my wonderful
discovery.
Since the frozen chicken was taking longer to cook, I started digging
around in the refrigerator for a snack. Remember the fresh tarragon?
I
still had some of the oil on my fingers when I peeled an orange. The
orange blended with the tarragon was unexpected and delicious. I'll try
that flavor combination again!
Total cost of the meal was $7.98 and would easily serve four or more people.

3 lbs boneless skinless chicken breast $7.99 (YES, we
carry this item
in our freezer section. I only used half a bag for this meal)
This dish could be made for even less expense by using a another pasta sauce.
We stock Del Monte and Hunt's for $.99 cents a can. Colonna's Marinara
Pasta Sauce ($.99 also) is another new item in this week's shipment. You
could top the whole thing with Kraft Parmesan Cheese ($1.99 instead of BSP
$2.99).
